I strive for simplicity in living but I know I still have a long way to go. I intend to share that journey here. From eating and exercise to relationships and business I hope to shine the KISS (Keep it Simple Sweetheart) principle on it all.
Most recently I've resolved to eat better and I think eating simpler is key. As I strive for sustainability in all areas of my life my mantra has become less, less, less! So my new year's resolution for 2011 was to eat less. Most days I'm meeting my goal but some days I fail completely. I'm not overweight but in our culture, overeating seems to be the norm and I'm realizing the damaging effects of it on all aspects of my health.
Speaking of new year's resolutions and damaging one's health, last year my resolution was to drink more. In the spirit of being more of a social drinker and letting my hair down a bit more. It worked out quite well and I've found my happy medium now so it's time to keep moving ever onward and upward!
Yesterday for lunch we had sweet potato hummus which my kids love, finally they will eat hummus, with fresh veggies of course. For supper I made a big pot of lentil soup, mmmmmmm. Enough for a lunch today and I put some in the freezer so I have some nutritious "fast food" for later as well as a soup bowl to take with me to work this weekend. My two days/week job at Co-op Grocery hasn't been the best thing for the diet of my family and I, as I find myself buying things I never used to like chips and pre-made pizza.
Well, gotta go feed my family again or maybe I'll just tell them we're going to start fasting tonight, I don't really feel like cooking right now ;)
